charcuterie tips from michelle

charcuterie tips from michelle

This elegant platter was prepared by our friend Michelle Mulford from Uncommon Feasts.

“This is such an easy way to create something delicious and beautiful. All these components are things you most likely have on hand. Maybe add a quick trip to the farmers market for vegetables. And you are all set.”

foundation pieces. “For our collaboration with GOOD I started with their long-handled walnut board. It’s good to have a number of serving utensils on-hand. Select from GOOD’s collection of walnut handled servers or antique + vintage utensils. Add a few small condiment serving bowls.”

getting started. “We pickle vegetables throughout the growing season to have them on hand all year long. You can do this with a simple rice wine brine and store in the fridge. We like to have a peppery, spicy vegetable to cut the richness of the salumi (cured meats). Radishes are always a perfect choice and arugula also works really well. For salumi, you are going for variety—from fatty to smoky to spicy. Also pay attention to the shape; it will make for an interesting board. (We tend to use free-form rolls + peaks).”

bread is key. “We also like a good, solid sourdough bread, whole wheat focaccia or crackers. We make our crackers in-house specked with chive blossoms, but a good commercial olive oil-based cracker works. Finally, we add a small pot of buttery mustard which pairs great with salumi and radishes. Move things around until it feels balanced.”

the finale. “For drinking we LOVE lambrusco. In the summer we choose an ice-cold rosé; the rest of the year a bone-dry red.”
Enjoy!  - Michelle Mulford
